"That" Guacomole

Have you ever made something and brought it to a party and everyone says "how did you make that"...this guacamole is "that" guacamole.  So now you can say, you got it from this website and send them here (shameless plug).  This guac is so simple and easy to make and so fresh and yummy...we put this on just about everything and sometimes even eat it straight up.  Enjoy!

INGREDIENTS

  • 3 ripe avocados

  • 1/2 roma tomato - finely diced

  • 1/2 jalapeño - minced

  • juice of 1/2 lime

  • 1/4 tsp cumin

  • 1/4 tsp chili powder

  • 1/4 tsp dried cilantro (3/4 tsp if you have fresh)

  • 1/8 tsp course salt

  • dash of pepper

  • dash garlic powder

  • dash of onion powder

INSTRUCTIONS

  1. Half and pit the avocados and use a large spoon to scoop flesh into a molcajete

  2. Use two forks, and sweep in a criss-crossing motion, until there are no large chunks -don't over mix...you want it chunky

  3. Add tomato, jalapeño, lime juice, spices and fold (with a fork) until spices are mixed through

  4. Serve with fresh veggies and enjoy!

ADDITIONAL NOTES

  • Skip the fried corn chips and opt for fresh cut veggies (cucumber, carrot, jicama, celery and radishes are some of our faves). The pic above is plantains I fried in duck fat, which is another great option

  • If you like it spicy then mince the whole jalapeño...sometimes we also add a habanero, which is delicious

  • If the lime is super juicy you may not want to squeeze all the juice as it can take over the flavor
